Sensational Stuffed Shells (Vegan)

Learn how to make these Sensational Stuffed Shells with homemade Vegan ‘Ground Meat’.

Vegan Ground Meat

Ingredients: 

7-8 Organic Baby Bella Mushrooms

8 oz. Organic Super Firm Tofu

1 cup of Walnuts

4-5 bulbs Fresh Garlic

Olive Oil

Grapeseed Oil (Optional)

Salt

Fresh Thyme

Rosemary 

Seasonings of Choice for Extra Flavor

In a food processor, combine your mushrooms, tofu, walnuts, fresh garlic, olive oil, salt, rosemary, and thyme. Pulse the mixture in the food processor for a ground meat consistency.

Heat your skillet. Drizzle your grapeseed oil, and add the vegan ground meat mixture. Add additional seasonings for your taste.

For this particular pasta dish,  you can add some of the pasta water. This isn’t necessary if you are using this ground meat for other recipes.


Stuffed Shells

Ingredients

Pasta Shells (Conchiglioni)

Organic Tomato Sauce

Yellow Onion

Garlic

Seasoning of Choice

Thyme

Rosemary

Parsley

Vegan Cashew Milk Mozerella

Vegan Double Cream Cashew Milk Cheese


Boil pasta shells in salted water for 9 mins.

Once pasta is cooked, save 2 cups of the pasta water. Drain the pasta and let cool.

For your sauce, sauté chopped onions and garlic and pour in your organic tomato sauce. Then, add two table spoons of the vegan ground meat, more chopped garlic, 1 cup of pasta water, and fresh herbs including thyme, rosemary, and parsley). Season you sauce, and add the additional pasta water if needed.

Prepare your baking pan with olive oil and a coat of our pasta zesty tomato sauce. Stuff the cooked shells with the Vegan Ground Meat, and add layers of sauce and cheese.

Cook at 325 degrees Fahrenheit until cheese is golden brown on top.
